February Feature: Traditional Polish Vegetable Salad (SaƂatka Jarzynowa)

SaƂatka jarzynowa is a beloved classic at Polish tables, often served at holidays and special family gatherings. It’s a creamy, colorful mix of cooked vegetables, eggs, and pickles, all coated in a light dressing that’s rich without being heavy.This dish carries delicious nostalgia alongside every bite.


🛒 Ingredients

Make a large bowl of salad (about 1.4 kg total):

  • 3 medium potatoes

  • 4 large carrots (or equivalent small carrots)

  • 2 parsley roots (optional)

  • 1 small celery root

  • 4 large dill pickles

  • 1 small onion or a piece of leek

  • 1 small apple (sweet or tart)

  • 1 can (about 400 g) of peas (drained)

  • 4 hard-boiled eggs

  • 4 tablespoons mayonnaise

  • 4 tablespoons plain yogurt

  • Salt (about œ teaspoon)

  • Black pepper (about ÂŒ teaspoon)


🍮 Instructions

1. Cook the base vegetables & eggs. Wash and boil the potatoes, carrots, parsley root, and celery until just tender. While they’re cooking, hard-boil the eggs (about 9–10 minutes), then cool and peel.

2. Chop everything into small pieces. Once the vegetables have cooled, peel and dice them into small cubes. Dice the hard-boiled eggs, pickles, apple, and onion/leek as well. Consistency should be fine-diced, not too chunky and not mushy.

3. Combine the salad in a large mixing bowl, combine the vegetables, eggs, pickles, apple, and peas.

4. Make the dressing. Add the mayonnaise and yogurt to the bowl and gently mix until everything is lightly coated. The texture should be creamy but not drowning in dressing.

5. Season to taste. Add salt and pepper to your preference. Some people like a hint of mustard or a bit more pickle juice. Feel free to adjust gently.

We're still unplugging, but now its about unplugging from isolation and disconnection, so we can reconnect with each other and the places we call home.
